Vegetable Lasagne (V)
Pumpkin, sweet potato, capsicum, zucchini & eggplant, layered with a rich tomato sauce, ricotta & béchamel sauce. Topped with cheese and baked till golden.
TUESDAY:
Pulled Pork Enchiladas
Slow cooked pork shoulder in Mexican spices and rolled into tortillas. Topped with spicy tomato sauce, cheese, & baked till crispy. Served with sour cream & guacamole.
WEDNESDAY:
Thai Green Chicken Curry (GF, DF, NF)
Chicken thighs cooked with an aromatic Thai green curry sauce, tossed with Asian vegetables & served with coconut rice.
THURSDAY:
Beef Brisket (GF, DF, NF)
Overnight slow cooked beef brisket in a smokey BBQ sauce. Served with duck fat crispy roasted potatoes and corn salsa.
